Description

This artisanal Serbian knife is a robust kitchen knife with a high blade and a comfortable grip, designed for chopping and preparing meat, vegetables and fresh herbs. Its versatile shape is also well suited to outdoor cooking. Its 1095 high-carbon steel blade provides exceptional sharpness, excellent edge retention and easy sharpening.

High-carbon steel naturally develops a patina through contact with food. This normal evolution adds character to the knife and helps protect the blade from corrosion.

Creation process

This knife is entirely hand-forged by Vincent Roussel-Lauzier at Atelier du Grand Frêne in Quebec’s Bas-Saint-Laurent region. The 1095 high-carbon steel blade is forged, heat-treated, shaped and sharpened by hand. The handle is then individually fitted and assembled by hand. The visible marks left by traditional forging are not defects: they are evidence of the artisanal process and make every knife unique. The Atelier du Grand Frêne mark is stamped into the blade.


Upkeep

Wash the knife by hand after every use and dry the blade immediately. Never place it in the dishwasher or leave it soaking in water. The 1095 high-carbon steel naturally develops a patina through contact with food; this change in colour is normal and helps protect the blade.

  • Apply a thin layer of food-grade mineral oil to the blade as needed, particularly before extended storage.
  • Maintain the wooden handle with food-grade tung oil. Atelier du Grand Frêne maintenance oil is available at the boutique in a 45 ml format.
  • Avoid cutting frozen food, bones or extremely hard materials.
  • Do not use the knife to pry, force or perform twisting movements.

I am a blacksmith, traditional toolmaker and ornamental ironworker. Since childhood, I have been fascinated by the Middle Ages—its architecture, armour, tools and the many creations that have endured through the centuries. When I discovered that blacksmithing had been central to so many of these achievements, I came to understand the fundamental role it played in the development of societies. Without metalworking, there would have been no tools for building, no implements for farming, no hardware, weapons or structures capable of supporting the advancement of civilizations. This realization inspired me to follow this path and help preserve this traditional craft.

Today, each of my creations is shaped by a process in which function, aesthetics and durability come together. I pay particular attention to the quality of the materials, the proportions, the ergonomics and the precision of the workmanship. Whether I am creating a tool, an architectural element or a decorative piece, I strive to design objects in which every detail serves a purpose and where utility, beauty and longevity are held in balance.

Through my work, I aim to create objects that are strong, useful and durable. My goal is to make pieces that can accompany their owners for many years, age well and, ideally, be passed down rather than replaced.
